Ok, already a lie in advertising. It’s more of a bake/casserole with Mexican influences in flavor.
•1 large sweet potato, cut in large, thin (1/8th-ish inch slices. I tried to have them fairly thin. They varied as I only had a dull knife to work with.)
•1 large (29 oz) can of black beans (I’m allergic to pinto beans, but somehow black beans are ok.)
•1 normal (14.5 oz) sized can of diced tomatoes. I used the kind with diced green chilies mixed in.
•1 small (4 oz) can green chiles. I used whole chiles cut into quarters but diced would work.
•1 can enchilada sauce. Mine was 19 oz.
•1 20 oz package of ground turkey. Mine was “taco flavored.”
I used enough canola oil to cover the bottom of my baking pan, which is about 8”x12” and 3” deep at a rough estimate. I preheated the oven to 425*. I might have turned it down to 375* about an hour in, bc I didn’t want it to burn. Use your best judgement. I did a layer of sweet potato slices (I’m allergic to regular potatoes and rice, but they would work well in this recipe. If you can have corn the world is your oyster.) on the bottom. I covered that with some black beans, then 1/2 the turkey, then all the tomato, then the chiles. Another layer of sweet potato slices, the rest of the beans, and the rest of the turkey. Then I dumped the whole can of enchilada sauce over the top, tried to cover everything evenly, and baked the whole thing for 1 hr and 1/2. Actually, it would have been done in an hr an a half, but I left it in almost 2 hours bc I wanted it to still be warm when my mom got home. It was slightly, SLIGHTLY spicy due to the whole chiles. I think it would have been milder with the diced. My mom doesn’t like spicy foods and she devoured her portions mightily, albeit with a side of rice, which she can eat. It was delicious!

I was mucking around with Audacity, listening to songs in reverse. For the fun of it, I put on everyone’s favorite song, Blurred Lines. And shockingly, I heard something I had never expected to hear. Robin Thicke was fooling us this whole time. He wasn’t trying to be misogynistic, he wanted us to listen closer to the song and understand that he in fact does believe his lady partner needs to be treated with the utmost respect.
You might find it VERY hard to believe, but I implore you to listen very closely (with headphones if you can, because it can be hard to hear). The message I’m talking about comes in around the 30 second mark.
